Extra Firm Tofu Breakfast Pancakes

Ingredients

454 grams Extra Firm Tofu (drained)

3 cups Rolled Oats

2 teaspoons Baking Powder

1/4 teaspoon Iodized Salt

1 cup Soy Milk

3 tablespoons Maple Syrup

2 teaspoons Vanilla Extract



Recipe Instructions

  1. Toss all ingredients in a high-speed blender. Add more water as needed.

  2. Heat a pan over medium heat and wipe with grape seed oil (or other high-heat oil). Once hot, pour in pancake mix.

  3. Flip once you see bubbles throughout (same as a typical pancake).

  4. Storage: Keeps in the fridge for 3-4 days. The mixture does thicken significantly overnight. Add water to thin as needed.
