Article: Master Plant Based Cooking in Maine
Our weekly Wednesday in-person group cooking classes have been such a blast. From learning knife skills, to having fun and relaxing with friends, every Wednesday has offered such a unique experience. Here's what to expect for February.
Background: Our medical clinician is pursing certification as a Professional Plant-Based Chef. This means that Lifestyle Medicine Maine Members are eligible to join in on taking this course alongside our medical clinician, Jessica Krol, FNP, DipACLM. When it comes to eating healthier meals, they need to taste good. Especially if we plan to reach and maintain our goal weight. And some of that means learning how to cook and setting aside time to make this a priority in our lives. That's why our community is going to come together once a week to prioritize cooking and have fun learning the skills together.
Here's what to expect: Each meeting takes place on a Wednesday from 5:30pm to 6:30pm in our medical clinician's home. These events will only be made available to active Lifestyle Medicine Maine members and are completely free to active members.
Which kitchen tools will you need to bring with you to events?
your own kitchen knife,
a cutting board (vegetable cutting boards only),
a bench scraper,
an apron (optional)
February 5th, 2025 from 5:30pm to 6:30pm
Topic: Steaming Vegetables
Task: Practice Steaming Vegetables and Dressing them (course units 115 through 119)

Ingredients to bring:
1 bag of Large Carrots
1 bunch of flat-leaf parsley
1 fresh lemon
Cumin Seeds (not ground)
1 green vegetable, 1 white vegetable, 1 purple vegetable and 1 orange vegetable
February 12th, 2025 from 5:30pm to 6:30pm
Topic: Cooking Vegetables in Water
Task: Practice Submersion, Blanching and Parboiling (course units 120 through 124)

1 head of fresh broccoli
2-3 large carrots
1 handful of green beans
3-4 baby potatoes (loose)
February 19th, 2025 from 5:30pm to 6:30pm
Topic: How to Sweat and Caramelize Veggies
Task: Creating the Base for a Soup (course units 131 through 133)

February 26th, 2025 from 5:30pm to 6:30pm
Topic: Master Dry Heat Cooking
Task: Learn to Saute and Pan-toss Ingredients While Making Sauteed Mushrooms (course units 134 through 136)

Your favorite pan
Ingredients to Bring:
1 package of whole white button or cremini mushrooms (1 lb) or a head of cabbage (your choice)
1 lemon
1-2 large potatoes (white or sweet)
